
Easter Leftovers: Deviled Egg and Green Bean Casserole (which wasn't as good cold as I thought it would be)

Simple lunch:

I took lunch in a smaller box today, probably could have organized things a little better.

Strawberries and grapes, cup of pears, lettuce divider, tortilla strips, fried rice (with peas, carrots, broccol, onions) and half a baked egg roll...someone else ate the other half this morning when I wasn't looking! O.0
Contents: Salad underneath Red Beet eggs and part of a veggie egg roll we discovered at the grocery store (pack of 5 to bake), a layer of leftover mac&cheese, a cup of pears. Soup on the side in a thermos.Question: is it just my thermos, or is there a trick to keeping things warm inside? (Or are my expectations too high?)

Meatless Meal: Peanut butter and Marshmallow fluff on hot dog roll, salad, grapes and strawberries, pasta salad, leftover chips.
Meatless Meal: Cheese-filled tortelini, strawberries and grapes, granola bar, carrots, rice and sauce.

When I told my mother I had decided to be vegetarian, she was good about it. The other night we made lasagna, and she told me she had planned to make a little meatless portion of it. I was very impressed that she was willing to do that, as I hadn't been expecting much.
However, not five minutes later, she reminded me that we have TUNA in the cupboard, and keeps telling me that I should take it for lunch....

PS - I'm loving the fruit. For V-day, my sister got an edible arrangement, and we're all slowly picking away at it. It's better than anything we've been getting at the store!

We made meatballs for dinner one night in the crockpot, and I asked to leave a couple out so I could put them in a lunch. Then I made some penne the night before, and put the two together with a little container of spaghetti sauce on the side.In this lunch:
4 days down, 4 to go! I have the sock tan to prove it.

So, the next two mondays I'm at band camp all day, and after that...school (ahhhh!). But hopefully I can still do some sort of muffin-tin breakfast type meal?

In other news, the bento box I ordered has officially been shipped out from Japan. They say shipping can take anywhere from 2-5 weeks, depending on where you live. In order to recieve the box before school starts, it has to come in 3 weeks, 3 days. Yikes. Cross your fingers for me!

I don't really make any bentos over the weekend, because I often eat with one or both of my parents, depending on how busy we are. So, weekend posts will either be sans bento, or bento for special occasions/catch-up bentos ;)
And perfect opportunity for actually getting a packed lunch out of the house: Band Camps!
I do not wear a plume or play an instrument, but I do spin a flag (you are never ever allowed to tell a member of our color guard that they 'twirl' anything; they will hurt you with their six foot flag poles).
